1 pound ground beef,
1 diced yellow onion,
3 to 4 pounds peeled and sliced potatoes (1/4-inch thick slices),
8 ounces shredded cheddar cheese or more if desired,
1 box cheddar cheese soup mix,
12 ounces evaporated or whole milk,
1/2 cup regular milk,
1 teaspoon salt
, 1/2 teaspoon pepper.
Instructions
: Preheat oven: Preheat your oven to 350°F (175°C).
Prepare baking dish: Spray a 9×13-inch baking dish with nonstick cooking spray.
Cook beef and onion: In a large skillet, cook the ground beef and diced onion until the beef is completely browned.
Slice potatoes: Peel and slice the potatoes into 1/4-inch thick slices.
Layer the ingredients: Arrange one-third of the potato slices in the bottom of the baking dish, season with salt and pepper, then spread one-third of the cooked beef and onion mixture over the potatoes, followed by one-third of the shredded cheese. Repeat these layers two more times, ending with the cheese on top.
Mix the soup and milk: In a bowl, combine the cheddar cheese soup mix, evaporated milk, and regular milk until smooth.
Pour the mixture: Pour the soup mixture evenly over the layered casserole.
Cover and bake: Cover the baking dish with aluminum foil and bake in a preheated oven for 1 hour.
Finish baking: Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and bubbly.
Cool and serve: Allow the casserole to cool slightly before serving.
Notes
For a lighter version, replace the ground beef with ground turkey or chicken. You can also make it vegetarian by replacing the meat with vegetables and plant-based proteins.
