Do not use for high-temperature frying.

Many people believe that extra virgin olive oil can be used for frying like any other oil. In reality, its smoke point (around 190°C) is lower than that of refined oils; heating it beyond this point leads to the degradation of polyphenols, the loss of its antioxidant activity, and the formation of undesirable and harmful compounds.
